Ingredients

Serves 6

½ medium onion, diced
2 cloves garlic, crushed
1 tablespoon olive oil
450g carrots, chopped
1 tablespoon fresh ginger, peeled and chopped
750ml vegetable stock
full fat natural yogurt
Method

Fry onion and garlic until soft
Add other ingredients and simmer for 10 minutes.
Purée in blender and serve immediately with a swirl (or more) of natural yogurt for garnish. Season to taste.
