1 small onion, chopped
350g plain flour
2 tsp baking powder
1/2 teaspoon chilli powder
300g mature cheddar cheese, grated
200 ml milk
150g baby spinach leaves
(10 individual loaf cases on a baking tray)
Preheat the oven to 180C (350F) Gas 4
Melt the butter over a medium heat and fry the onion until cooked. Set aside.
Mix the flour, baking powder, chilli powder and cheese in a bowl.
In a separate bowl, beat the egg and milk and slowly pour into the flour mixture. Continue to beat until all ingredients are well mixed.
Add the onion and spinach and stir until evenly mixed.
Spoon the mixture into the loaf cases and bake for 30-35 minutes or until golden brown and springy to touch.
