Sidmouth Hot Spiced Pork

Thick Purée: Blend cooked dish to a smooth consistency

This is another tried and tested traditional full flavour recipe from ‘the valley’.


Serves 6

2 teaspoons vegetable oil
1 garlic clove, crushed
1-2 teaspoons of chilli sauce (to taste)
2 teaspoons soy sauce
1 tablespoon worcester sauce
1 tablespoon soft brown sugar
1 tablespoon tomato purée
1 tablespoon wine vinegar
1 teaspoon ground ginger
ground pepper
Pork (or chicken) – fillet, cubed or diced

Add all ingredients to mixing bowl
Allow to marinade in fridge for 2-24hrs stirring occasionally
Prepare grill or griddle pan
Remove meat and add to pan
Add marinade slowly
