Cauliflower Soup

Another great, tasty recipe from Sue, our speech and language therapist. This recipe can also be complemented by the addition of mushrooms

Ingredients

Serves 6

2 leeks – white part only, chopped
1 tablespoon olive oil
450g cauliflower florets
600ml vegetable stock
4 tablespoons full fat natural yogurt
2 tablespoons fresh dill, chopped
Seasoning to taste (salt, pepper, chilli powder, mustard powder)

Method

Cook the leeks in the olive oil until soft
Add vegetable stock and cauliflower
Cover and simmer on low heat until cauliflower is tender
Blend the mixture until smooth and add the yogurt and spices
Serve warm
