Caribbean Pork and Pineapple

Ingredients

Serves 6

680g pork
2 tablespoons vegetable oil
1 pepper
1 onion
3 tablespoons soy sauce
2 tablespoons sherry (or madeira etc according to preference)
2 tablespoons soft brown sugar
½ teaspoon ginger
230g pineapple cut into chunks
½ pint (280ml) pineapple juice
2 teaspoons mustard
Pinch salt and pepper
2 teaspoons tomato purée
Method

Heat oil in hot pan
Fry onion and pepper until soft
Add pork and other ingredients
Bring to boil then simmer for about 30minutes
Add extra water +/- cornflour to thicken if required
