Caribbean Ham


Straight from ‘the valley’ comes another tasty meal that our friends found useful whilst looking after their Grandfather


450g of ham (or any meat you wish)
2 tablespoons vegetable or olive oil
2 teaspoons mustard
2 tablespoons of brown sugar
2 tablespoons of dry sherry (optional)
3 tablespoons of soy sauce
half teaspoon powdered or fresh ginger
8 sections of fresh or tinned pineapple
2 tablespoons of tomato purée
red or green pepper
carrot and celery
1 tablespoon cornflower

Fry the meat and vegetables together
Once pork is browned add the other ingredients and simmer for
about 30mins
Mix in 1 level tablespoon of cornflower with 2 tablespoons of water
Stir until desired consistency
